Baked Yukon Gold Potato Discs with Caramelized Onions and Fresh Rosemary


I can't cook enough of this dish!  Breakfast, Lunch and Dinner!



4 Yukon Gold potatoes skin on (sliced 1/8-inch rounds)

1 medium sized onion- thinly sliced

3 sprigs- fresh rosemary (stems removed)  

¼ cup extra virgin olive oil

Salt and pepper to taste



Bring water to boil in medium saucepan

Add sliced potatoes and par boil for 7 minutes- drain and set aside

Preheat oven to 400 degrees


Place sliced potato discs into bowl, coat with olive oil and lightly toss

Remove and place single layer on foiled sheet pan

Sprinkle onion slices and rosemary onto the potatoes

Season with salt and pepper.


Bake 30 minutes or until potatoes are golden brown

Serve immediately
