It has been an amazing summer season of harvesting cucumbers & I have an abundance of them. This salad is clean, fresh & easy to prepare. The combination of sweet and savory flavors is perfect for brunch or a late afternoon treat.
2 Medium Cucumbers - Peeled & Sliced into ½ -inch discs
½ Large Seedless Oval Watermelon - 1-inch Chunks
1 Cup - Crumbled Feta Cheese
1/3rd - Cup Thinly Sliced Mint Leaves
For Lime Syrup
1/3 cup Granulated Sugar
1 Lime - Grated Zest & Juice
Stir the sugar, 2 tablespoons of water, lime zest, & 1 1/2 tablespoons of lime juice in a small heavy saucepan over high heat until the sugar dissolves & the syrup comes to a boil. Let the syrup cool completely, and then refrigerate it until cold.
In Mixing Bowl, Combine Cucumbers, Melon, Feta & Mint
Add Lime Syrup Mixture & lightly toss
Garnish with Mint Leaves
