Poached Shrimp, Peach, Corn & Red Pepper Salad- Peach Syrup

Peaches are ripe and flavorable, Red Peppers are sweet, and Corn is crunchy

I have prepared this dish as a first course for a recent dinner party & was a big hit!



1 lb.- poached shrimp (tails removed)

4 ripe peaches - skins removed and chopped in ½ inch cubes

2 ears of corn - steamed & kernels removed

1 small red onion - thinly diced

1 mid-sized red pepper - cored and diced into small pieces.

¼ cup finely chopped parsley

Salt and Pepper to taste


Peach Syrup

½ cup granulated sugar,

½ cup water

Peach Juice from sliced peaches




Bring sugar, water & peach liquid to boil.

Reduce over medium heat (15- 20 minutes)

Set aside to cool


In Ceramic Bowl

Combine all ingredients & refrigerate for 1 hour

Add syrup and gently fold into the mixture


Serve over a bed of arugula or mesclun greens
